Job Description

Summit Oaks Hospital is a 122 bed private acute care hospital and chemical dependency treatment center that has been treating children, adolescents and adults, in a suburban setting, since 1902. Summit Oaks was selectedfor inclusion in U.S. News & World Reports annual review of Best Pyschiatric Hospitals (2013-2014).
Our busy Food Service Department is seeking a Cook who will prepare meals for patients, employees and special functions according to the approved menu cycle and production sheets.

PRIMARY RESPONSIBILITIES

1. Coordinates tray service and sets up tray line and cafeteria line for meal service.
2. Comply with facility and departmental policies and procedures regarding food services offered.
3. Follow menus and recipes as provided by the Director of Food & Nutrition Services and Dietician.
4. Prepare meals and beverages according to menu cycle and daily production sheet, providing attention to attractive and tasteful meals.
5. Accurately prepare food for modified diets, consulting with Dietician as required.
6. Complete and prepare meals in a timely manner as prescribed by posted meal times.
7. Follow posted cleaning schedule and ensure a clean work area and dining room 100% of the time.
8. Document refrigeration temperatures as assigned on schedule.
9. Adhere to standards for food temperatures during cooking, serving and storage of leftovers. Logs food temperatures in the log book 100% of the time.
10. properly date and label all food items and stores food/leftovers properly 100% of the time.
11. Adhere to appropriate portion control and avoid over production.
12. Comply with established guidelines for sanitation and safety according to NJ State Sanitation code: Chapter 24. Completes food temperature logs.
13. Interact with patients in the serving line, offering assistance in the selection of a nutritionally balanced meal.
14. Support and encourage harmonious working relationships within the department, as well as with all employees in the facility.
15. Report any equipment malfunction immediately to the Director of Food & Nutrition Services,
Chef Manager or internal maintenance department.
16. May provide assistance with washing dishes and maintaining dish room in a clean and orderly fashion.
17. Responsible for turning off all eqiptment, inspecting the cooking area for cleaniness.
18. Performs cleaning assignments in cleaning log book, initials when completed 100% of the time.

Note: The essential job functions of this position are not limited to the duties listed above.

Job Requirements

Education/Experience: Must have at least 3-5 years experience in quantity cooking, a basic knowledge of modified diets; training in food service sanitation and possession of food service food handlers permit as required; experience utilizing industrial kitchen equipment and utensils.
High School Diploma or equivalent preferred.
Serv Safe Certification required.
Culinary or food management courses from an accredited school or equivalent training program preferred.
